Ingredients
  

  • 1 cup Fresh Blueberries
  • 8 oz Cream Cheese
  • 1 cup Granulated Sugar
  • 2 cups All-Purpose Flour
  • 2 Large Eggs
  • 1/2 cup Unsalted Butter
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 1/2 tsp Table Salt
  • 1 tbsp Lemon Zest

Instructions
 

Step 1:

  1. Preheat your oven to 350 degrees now. Grease your loaf pan with some butter. You can also use a light spray. Line the pan with some parchment paper.

Step 2:

  1. Whisk your flour and baking powder together. Add the salt to this dry mix. Set this bowl aside for a moment. This ensures the lift is very even.

Step 3:

  1. Beat the soft butter and sugar together. Use your electric mixer for this part. The mix should look light and fluffy. This takes about three minutes of mixing.

Step 4:

  1. Add the eggs to the butter mix. Do this one egg at a time. Mix well after you add each egg. This keeps the batter from splitting apart.

Step 5:

  1. Stir in the vanilla and lemon zest. Use a low speed on your mixer. The aroma will be very fresh now. This adds a layer of great flavor.

Step 6:

  1. Add the dry ingredients to the wet. Do this in three small batches. Stir until the flour just disappears now. Do not overmix the thick batter here.

Step 7:

  1. Toss your berries with a little flour. This stops them from sinking to bottom. Fold them into the batter very gently. Use your rubber spatula for this task.

Step 8:

  1. Mix the cream cheese and extra sugar. Do this in your medium bowl now. Beat it until it is very smooth. This will be your creamy hidden layer.

Step 9:

  1. Pour half of batter into the pan. Spread it out into a flat layer. Use the back of a large spoon. This forms the base of the loaf.

Step 10:

  1. Spread the cream cheese over the batter. Stay away from the very edges. This keeps the filling inside the bread. It creates a beautiful swirl later on.

Step 11:

  1. Top with the rest of the batter. Smooth the top with your clean spatula. Add a few more berries on top. This makes it look very pretty.

Step 12:

  1. Bake the loaf for sixty-five minutes. Check the center with a long toothpick. It should come out clean and dry. Let it cool before you remove it.

Notes

  • Always use room temperature eggs for mixing.
  • Do not overmix the batter after the flour.
  • Toss berries in flour so they do not sink.
  • Full-fat cream cheese provides the very best flavor.
  • Let the loaf cool completely before you slice.
  • Cover with foil if the top browns fast.
  • Fresh berries are better than frozen berries here.
