Step 1: Prepare Your Cinnamon Sugar and Oil
Mix the sugar and cinnamon together in a shallow bowl. Set it aside. Pour the vegetable oil into your Dutch oven and heat to 360°F over medium-high heat.
Step 2: Cook the Dough Base
Combine water, butter, sugar, and salt in your saucepan. Bring it to a full boil over medium heat. Once boiling, take it off the heat immediately.
Step 3: Add the Flour
Dump all the flour in at once. Stir fast and hard with your wooden spoon until a smooth dough ball forms. Put it back on low heat for 1-2 minutes to dry it out slightly.
Step 4: Cool and Add Eggs
Transfer the dough to a mixing bowl. Let it cool for 5 minutes. Beat in the eggs one at a time, then stir in vanilla extract until the dough is glossy and smooth.
Step 5: Pipe the Churro Fries
Spoon the dough into your piping bag fitted with the large star tip. Carefully pipe 5-inch strips directly over the hot oil and snip each one off with kitchen scissors.
Step 6: Fry Until Golden
Fry 4-5 churro fries at a time for 2-3 minutes per side until deep golden brown. Remove with tongs and drain on paper towels for one minute.
Step 7: Coat in Cinnamon Sugar
Roll each hot churro fry immediately in the cinnamon sugar mixture. The coating sticks best when they are still warm from the fryer. Do not wait.
Step 8: Make the Chocolate Dipping Sauce
Warm the heavy cream in a small saucepan or microwave. Pour it over the chocolate chips. Stir until completely smooth and glossy. Serve warm alongside the churro fries.
