Crack Cake Recipe

I'll never forget the first time I pulled this out of the oven. My kitchen smelled like warm cinnamon and toasted sugar, and everyone wandered in from the living room without being called.

Equipment

  • Bundt Pan
  • Large Mixing Bowl
  • Medium Mixing Bowl
  • Electric Hand Mixer or Whisk
  • Small Saucepan
  • Bamboo Skewer
  • Nonstick Baking Spray
  • Measuring Cups and Spoons

Ingredients

  • 1 box Yellow Cake Mix
  • 1 box (3.4 oz) Instant Vanilla Pudding Mix
  • 0.5 cup White Granulated Sugar
  • 0.25 cup Brown Sugar
  • 1 tsp Cinnamon
  • 4 large Eggs
  • 0.5 cup Vegetable Oil
  • 0.5 cup Water
  • 0.75 cup White Wine
  • 0.5 cup Unsalted Butter

Instructions

  1. Step 1: Preheat and Prep Your Pan

Preheat your oven to 350°F. Spray your bundt pan very generously with nonstick baking spray, getting every crevice covered.
  2. Step 2: Mix the Dry Ingredients

Add the yellow cake mix, instant vanilla pudding mix, white sugar, brown sugar, and cinnamon into a large mixing bowl. Whisk them together until fully combined.
  3. Step 3: Add the Wet Ingredients

Pour in the eggs, vegetable oil, water, and white wine. Beat with a hand mixer or whisk until smooth and fully combined without overmixing.
  4. Step 4: Pour and Bake

Pour the batter into the prepared bundt pan. Bake for 50 to 60 minutes, or until a toothpick inserted into the thickest part comes out clean.
  5. Step 5: Make the Glaze

While the cake is still hot, melt butter, white wine, and sugar together in a small saucepan over medium heat. Stir until the sugar fully dissolves, then remove from heat.
  6. Step 6: Poke and Glaze

Use a bamboo skewer to poke holes all over the bottom of the cake while still in the pan. Pour the hot glaze slowly over the cake and let it soak for 15 to 20 minutes.
  7. Step 7: Invert and Serve

Place a serving plate over the bundt pan and carefully flip it over. Let the cake rest until fully cooled before slicing and serving.

Notes

➜ Grease your bundt pan very well or the cake will not come out.
➜ Do not overmix the batter; stop once everything is just combined.
➜ Use a neutral white wine like a basic table wine, not sweet or fruity.
➜ Pour the glaze slowly so the cake absorbs it without overflowing.
➜ Let the cake sit in the pan for at least 15 minutes before inverting.
➜ Check doneness with a toothpick; if it comes out wet, give it 5 more minutes.
➜ The cake tastes even better the next day once the glaze fully settles.
