- 4 large Salmon Fillets
- 500 g New Potatoes
- 200 g Cherry Tomatoes
- 1 bunch Asparagus
- 1 whole Lemon
- 2 tbsp Olive Oil
- 1 tsp Dried Oregano
- 1 pinch Salt and Pepper
Step 1
Preheat your oven to 200 degrees Celsius now. Wash your new potatoes in cold water carefully. Cut the larger potatoes into small halves.
Step 2
Place the potatoes into the large roasting tin. Drizzle them with half of the olive oil. Roast them for 15 minutes until slightly soft.
Step 3
Add the cherry tomatoes to the roasting tin. Put the asparagus spears in with the potatoes too. Sprinkle the dried oregano over all the vegetables.
Step 4
Place your salmon fillets on top of vegetables. Season the fish with salt and black pepper. Squeeze half of a lemon over the tray.
Step 5
Put the tray back into the hot oven. Bake everything for another 10 to 12 minutes. The salmon should be flaky and fully cooked.
