Ingredients
  

  • 350 g Strong White Bread Flour
  • 150 g Rye Flour
  • 50 g Sunflower Seeds
  • 50 g Pumpkin Seeds
  • 25 g Linseeds
  • 7 g Instant Yeast
  • 1 tbsp Black Treacle
  • 1 tsp Salt
  • 350 ml Warm Water

  1. Step 1

    Prepare your loaf tin before you start. Line it with some non-stick baking paper. This makes cleaning up very easy later. Grease the edges with a little butter.
  2. Step 2

    Place both types of flour into the bowl. Add the salt and the instant yeast now. Stir the dry mix with your spoon. Ensure the yeast is spread out well.
  3. Step 3

    Add most of your seeds to the bowl. Save a few seeds for the top later. Mix them so they are spread evenly. Ingredients for Mary Berry Nordic Loaf are now ready.

    Measure your warm water into a small jug. Add the black treacle to the warm water. Stir until the treacle has fully dissolved. The water will turn very dark.

    Pour the dark liquid into the flour mix. Stir it well until a dough forms. The dough should feel quite wet and sticky. Do not add too much extra flour.

    Knead the dough on a floured surface. Do this for about ten minutes total. The dough will become smooth and elastic. It should feel strong and stretchy.

    Place the dough into your lined loaf tin. Press it down into the corners firmly. Smooth the top with a wet hand. This creates an even loaf shape.

    Sprinkle the remaining seeds over the top. Press them into the dough so they stick. Cover the tin with a clean cloth. Keep it away from cold drafts.
  9. Step 9

    Leave the tin in a warm place. Let the dough rise for one hour. It should double in size during this time. The dough will reach the top.
  10. Step 10

    Heat your oven to 200 degrees Celsius. Bake the loaf for about thirty minutes. The loaf should sound hollow when tapped. Remove it from the tin immediately.
