Equipment

  • Large Glass Jar
  • Small Saucepan
  • Sharp Knife
  • Cutting Board
  • Measuring Cups
  • Measuring Spoons

Ingredients

  • 16 oz Smoked Sausage
  • 2 cups White Vinegar
  • 1 cup Water
  • 1 tbsp Pickling Salt
  • 1 tbsp White Sugar
  • 1 tsp Red Pepper Flakes
  • 3 cloves Garlic

Instructions

Step 1:

  1. Wash your glass jar with hot soapy water. Rinse it well and let it dry. This keeps your snack very fresh.

Step 2:

  1. Place the sausages on your cutting board. Slice them into three-inch long pieces. You can also cut them into rounds.

Step 3:

  1. Pack the sausage pieces into the clean jar. Push them down to fit as many as possible. Leave some room at the top.

Step 4:

  1. Peel the garlic cloves with your fingers. Drop them into the jar with the meat. Add the red pepper flakes now too.

Step 5:

  1. Put the vinegar and water in the saucepan. Add the salt and the white sugar. Stir the mixture with a big spoon.

Step 6:

  1. Turn the stove to medium-high heat. Bring the liquid to a rolling boil. Let it boil for three full minutes.

Step 7:

  1. Carefully pour the hot liquid into the jar. Cover all the sausage pieces completely. Stop just below the rim of the jar.

Step 8:

  1. Wipe the rim of the jar with a cloth. Put the lid on and twist it tight. Let the jar sit on the counter.

Step 9:

  1. Wait for the jar to reach room temperature. Then place the jar in the refrigerator. Let it sit for three days.

Notes

➜ Use pre-cooked sausages for the best safety.
➜ Do not use copper pots for the vinegar.
➜ Keep the sausages fully under the brine liquid.
➜ Wait three days for the best spicy flavor.
➜ Add a bay leaf for a woody aroma.
➜ Ensure the jar lid is sealed very tight.
