Small Whisk
- 1 cup warm milk
- 2.25 tsp active dry yeast
- 0.33 cup white sugar
- 0.25 cup melted butter
- 1 large egg
- 3.5 cups all purpose flour
- 0.5 tsp salt
- 1 tsp vanilla extract
- 4 cups vegetable oil for frying
- 2 cups powdered sugar for glaze
- 4 tbsp milk for glaze
Bloom the Yeast
Warm the milk in a small bowl. Add the yeast and a little sugar. Let it sit for ten minutes. It should look very bubbly and foamy.
Mix Wet Ingredients
Get your large mixing bowl ready. Add the melted butter and the egg. Pour in the foamy yeast mixture. Whisk them together until they are smooth.
Add Dry Ingredients
Slowly add the flour and the salt. Mix on a low speed at first. A soft and sticky dough will form. Do not add too much extra flour.
Knead the Dough
Put the dough on a floured surface. Fold it over and press down. Do this for five full minutes. The dough should become very smooth.
First Rise
Grease a clean bowl with some oil. Place the dough ball inside carefully. Cover it with a warm damp cloth. Let it rise for one hour.
Roll the Dough
Punch the dough to let air out. Roll it until it is half-inch thick. Use your cutter to make circles. Save the small holes for frying later.
Second Rise
Place the cut donuts on a tray. Cover them gently for thirty minutes. They will puff up and look very light. This step is very important.
Fry the Donuts
Heat the oil to 350 degrees. Drop two donuts into the hot oil. Fry each side for one minute. They should look perfectly golden brown.
Cool and Drain
Take the donuts out of the oil. Place them on paper towels for a bit. This removes the extra oil from them. Move them to the wire rack.
Glaze the Donuts
Whisk the powdered sugar and milk together. Dip the warm donuts into the glaze. Let the extra icing drip off slowly. Serve them while they are still warm.
